Expert named possible reasons for salmonella contamination of meat in Magnolia stores

The reasons for the appearance of salmonella in meat products sold in supermarkets may be diverse, but more often are related to the production process. This was stated by Konstantin Derevskov, general director of the consulting company "Start of Quality", commenting on the results of the Izvestia investigation, according to which E. coli and salmonella were found in meat ordered and delivered from the store "Magnolia".

"For example, raw materials can be contaminated at the stage of cutting. This is possible, for example, due to the use of a dirty knife or insufficient sanitation. There are certain norms of salmonella content in the product, and non-compliance with these protocols indicates violations, whether sanitary or technological conditions," said Konstantin Derevskov.

Salmonella development is also possible in the store, but only if the temperature regime of storage is violated, the expert explained. If the norm of storage involves a temperature of +2 to +6 degrees, and the product is stored at a temperature higher, for example, at +12 degrees, it can stimulate the growth and multiplication of bacteria.

"Shish kebabs sold in vacuum packaging are in an oxygen-free environment, which minimizes the development of pathogens, including salmonella. Therefore, it is important for shoppers to pay attention to package integrity and tightness. If the product is offered in open trays or buckets, the temperature conditions of storage are of paramount importance, as salmonella develops faster under normal conditions," he added.
