Roskachestvo told about the rules of food transportation during the trip
The conditions of transportation of food souvenirs directly affect their safety and health. On August 26, experts from the Roskachestvo Center for Food Safety Competencies listed recommendations to Izvestia on the proper transportation of food in order to avoid spoilage on the way.
For animal products and ready-made delicacies, the optimal temperature range is from two to four degrees Celsius. Thermos bags and special cold storage batteries help to maintain such conditions.
"Without additional cooling elements, an ordinary refrigerator bag keeps the cold for no more than one and a half to two hours. Cold storage batteries extend this period to six hours and reduce the temperature inside the package by 15-20 degrees relative to the outside air," the organization noted.
When choosing cheeses, experts recommend buying hard and smoked varieties, as they are more resistant to temperature fluctuations. Soft cheeses must be placed in airtight containers. Meat products and sausages are safer to transport in factory vacuum packaging with the preservation of labeling. Violation of the integrity of such containers dramatically reduces the shelf life and creates an environment for bacterial growth.
Honey, jam and olive oil tolerate the road well, provided it is airtight, but they are sensitive to external factors. Sudden temperature changes can lead to crystallization of honey, and heating the oil in the trunk of the car accelerates the oxidation process, which spoils the taste of the product. Industrial sauces in glass or vacuum are stable at room temperature, but they must be consumed immediately after opening.
Roskachestvo stressed that before buying food as a gift, it is important to calculate the travel time. If the trip lasts more than five hours and it is not possible to provide cooling, it is recommended to abandon the purchase of perishable goods.
On August 18, Elena Specenko, director of the Roskachestvo Center for Food Safety Competencies, warned that the habit of putting hot food in the refrigerator could ruin other products. The expert said that the temperature in the refrigerator rises sharply if you put a hot pot in it. This is especially critical for older models with a single compressor: the technology does not have time to compensate for the influx of heat, which creates favorable conditions for the reproduction of bacteria.
