Any okroshka can be turned into both a healthy and a harmful dish. Nutritionist Elena Solomatina told about this on Tuesday, July 7.
"The most important thing is how the okroshka is poured. If it's kvass, then you need to choose natural fermentation, so that it is fermented, or, as our grandmothers did, on rye bread. The less sugar there is in such kvass, the better," the expert said in an interview with Radio 1.
She added: in order to make the dish healthy, you should replace sausage with meat, such as lean beef, veal, chicken or turkey.
The nutritionist also recommended that those who follow the figure, instead of potatoes, add jerusalem artichoke, which contains a lot of insulin and fiber. Solomatina emphasized that kefir has a low glycemic but high insulinemic index.
"It is better to replace it with sour cream or low-fat yogurt. You don't need a lot of salt, because it increases blood pressure and retains fluid in the body," the expert concluded.
