How much does okroshka cost?
The Okroshka Index has grown by 10% over the year, the OFD Platform analytical center told Izvestia. A dish for four people will cost at least 720 rubles.
Over the past year, almost all the ingredients for making okroshka on kvass have risen in price, only one of the main ones — potatoes — has become cheaper. Currently, the average cost of a kilogram of potatoes is 64 rubles, which is 25% lower than last year. You will have to pay about 135 rubles per liter of kvass, which is 12% more than in 2025.
The average price of 300 grams of boiled sausage is 263 rubles, 8% higher than a year ago. Onions and dill have risen in price by 10-12% — they can be bought for 27-64 rubles. A kilogram of cucumbers costs 190 rubles on average, which is 14% more than in 2025. Radish rose the most in price — 1 kg will cost 243 rubles (+21%). Sour cream added 2%, eggs — 16%, analysts said.
Thus, the average price of a set of products for kvass okroshka was 1,235 rubles. However, if you cook a dish according to a traditional Soviet recipe, which strictly regulates the consumption of food, then four servings will cost 720 rubles. However, this is 10% more than in 2025.
In addition, analysts note that people increasingly prefer more expensive products, which also affects the final receipt. At the regional level, this trend is even more noticeable. For example, in Moscow, the okroshka index is 909 rubles, which is 9% higher than last year's figure.
According to estimates by the Cooper delivery service, the average cost of a basic okroshka kit in 2026 is 462 rubles. At the same time, five servings of a dish on kefir will cost about 502 rubles, and on kvass — 532 rubles.
Analysts at the martech company First Data believe that the okroshka index has grown by 25% over the year. According to their research, cucumbers, radishes and eggs have become 60-131% more expensive. Potatoes have fallen in price by 25%.
— The ready—made okroshka mix - a set with chopped vegetables and sausage — has increased in price by 23% over the year, increasing from 212 to 260 rubles. At the same time, the cost of a dish has increased: one serving now costs 193 rubles against 154 rubles in 2025, the experts noted.
But according to analysts of the X5 Club loyalty program, okroshka has fallen in price by 14%. Experts say that self-cooking a dish this year will cost about 74 rubles per serving. In 2025, the cost of such a plate was 86 rubles. The calculations took into account the classic recipe with boiled potatoes, radishes, green onions, eggs, boiled sausage and kvass.
How is okroshka useful and how to store it
Okroshka is a hearty, balanced and nutrient—rich dish, says Ekaterina Kashukh, a gastroenterologist and expert at the Hemotest laboratory. In addition, a cold dish helps to tolerate the heat more easily and maintain water balance.

Kvass or kefir, which are used for refueling, contain probiotics — they have a beneficial effect on the immune system and digestive tract, the doctor explained. However, in people with stomach and intestinal diseases, okroshka can cause discomfort: kvass or carbonated mineral water, large amounts of radishes, onions and other spicy greens can provoke bloating and increase heartburn.
Svetlana Kanevskaya, Deputy Chief Physician for Internal Medicine and Longevity Medicine at the K+31 clinic network, believes that okroshka is harmful to patients with gastritis, peptic ulcer, irritable bowel syndrome, liver and biliary tract diseases. According to her, radishes, green onions, garlic, excess raw fiber, fatty meat products and large amounts of salt can exacerbate the symptoms. In addition, serving a dish too cold can provoke cramps and dyspepsia.
"With caution, okroshka should be consumed by people with obesity, diabetes, hypertension and metabolic syndrome, especially if the dish contains sausage, potatoes and pickled ingredients," she said.
