Nutritionist Alla Makarova told how to diversify the summer menu. According to her, you can experiment with cold dishes. In an interview with Radio 1 on Thursday, June 11, Makarova advised giving preference to chilled versions of familiar dishes in the heat.

According to her, instead of hot soups, you can choose beetroot or okroshka, and instead of heavy side dishes, hearty salads. The expert emphasized that any meal should contain proteins, fats, carbohydrates and fiber.

She recommended using herbs and vegetables as the basis for a summer salad, adding cereals or legumes, protein sources, and healthy fats. According to the expert, such a diet helps to maintain a feeling of satiety, provides the body with vitamins and at the same time is easier to tolerate in hot weather.

On the eve of June 10, brand chef Rostislav Novozhilov told us which cold soups can be a good alternative to the usual okroshka. Among the most understandable options are beetroot, cold cabbage soup, cold borscht and gazpacho, the website writes kp.ru .

On June 3, restaurateur Igor Bukharov called okroshka on beer the trend of the 2026 holiday season. According to him, the start of this idea was given by the federal action "Beer Days of Russia", which will be held in the country from May 28 to June 30, notes 360.ru .

Before that, on June 2, nutritionist-endocrinologist Anton Polyakov said that it is difficult to find a balanced alternative to kvass and kefir, which will be without sugar and milk and will preserve the taste of traditional okroshka. Meanwhile, you can use homemade kvass, in which, unlike store-bought, "sugar is not implied," writes NSN.

In May, Daria Rusakova, a nutritionist, warned that salty ingredients in okroshka strain the kidneys. In addition, in the presence of gastrointestinal diseases, kvass and fermented dairy products can cause fermentation, bloating, heartburn in combination with other ingredients that are included in the composition, since the dish is multicomponent, writes RT.

At the same time, doctor Svetlana Kanevskaya warned about the risks of eating okroshka for gastrointestinal diseases and diabetes. According to her, with regular consumption, it is important to take into account the content of salt, saturated fats and fast carbohydrates.
