Russians were told the main danger of May kebabs
Shish kebab can become dangerous due to temperature violations, cross-contamination and insufficient heat treatment. Elena Specenko, director of the Roskachestvo Center for Food Safety Competencies, told about this on Wednesday, April 22.
The specialist named the rules that must be followed at a picnic to avoid health problems. She clarified that, first of all, the use of one knife and containers for slicing and storing raw meat, bread and vegetables can harm health.
"Bacteria from the surface of raw meat immediately transfer to finished products. A person eats a tomato sliced with the same knife as pork, and after a few hours gets a severe infection. For a barbecue, you need to have at least two knives and two boards: one for raw meat only, the second for everything else," Specsenko explained in an interview with Lenta.Ru .
She stressed that raw meat, even pickled meat, cannot be stored at room temperature for more than two hours, and when traveling to nature, a thermos bag with cold storage batteries is required.
The expert also warned against washing raw meat before frying — water from the surface of the piece splashes within a radius of up to a meter, infecting the sink and neighboring products. According to her, the safe way is to blot the meat with paper towels and immediately throw them away.
"Shish kebab is safe if transparent juice flows out of the meat when punctured, and the fibers easily separate. If the juice is pink, heat treatment is insufficient. This is especially true for chicken: the pink color on the bone is a sign of a dangerous undercooking," the specialist emphasized.
She recommended not to leave the finished barbecue on the table for more than two hours, and in case of heat above +25 degrees — for one hour.
Roskachestvo also said that it is better to take a shish kebab packaged by the manufacturer and not buy semi-finished products in white sauces. 360.ru .

Viktor Fedoruk, a leading expert on housing and communal services, told in an interview with Pravda.Ru When installing a barbecue, it is important to prepare the place in advance and remove all flammable materials. He noted that there should be no dry grass, leaves or other materials that could catch fire within a radius of 10-15 meters. The barbecue area must be cleaned, mowed or covered with sand at least within a meter and a half. This reduces the risk of fire from fallen coals. Violators face a fine of up to 15,000 rubles.
