In Russia, GOST has been developed for the preparation of liver and "kidneys in Russian"

The draft of the first GOST of traditional Russian cuisine contains recommendations for cooking liver and kidneys. This is evidenced by the relevant document, which was reviewed by RIA Novosti.

The draft standard specifies that before cooking, the liver must be cleaned of films and ducts, and then fried in butter, ghee or vegetable oil. When cooking in large pieces, it is allowed to add bacon or garlic. When serving, it is recommended to add onions and pour melted butter over the dish.

The document also provides recommendations for cooking "kidneys in Russian". Veal, lamb, pork or beef kidneys can be used for the dish. At the same time, beef kidneys require pre-soaking and boiling before stewing.

According to the draft, the kidneys should be stewed in red sauce with sour cream, vegetables and pickles. Before serving, the dish is seasoned with salt ground with garlic and chopped herbs.

Earlier, on April 3, it became known that Russia had developed a draft of the first GOST of traditional Russian cuisine, including kolobok dishes. It is known that so far the recommendations have been developed for only 133 dishes, but it is planned to expand them in the future.
