Fillings made from chocolate, condensed milk and jam are the most harmful fillers of pancakes due to their high fat and carbohydrate content. This was announced on Friday, February 20, by general practitioner, nutritionist Elena Ustinova.
"The most harmful is the filling, where there are a lot of fats and a lot of carbohydrates: hot chocolate, or condensed milk, or jam," she said in an interview with RIA Novosti.
The specialist, speaking about healthy fillings, urged Russians to give preference to those ingredients that contain a lot of protein. These include fish, meat, poultry, as well as cabbage, eggs, and various vegetables.
The head of the Competence Center for Functional Nutrition of Roskachestvo, Maryam Davlekamova, told a day earlier which components in traditional pancakes can be replaced to make this dish healthier. So, she recommended during Shrovetide week, when the load on the body increases, to prepare treats not from wheat flour, but, for example, amaranth. This ingredient has a high content of dietary fiber, which has a beneficial effect on digestion, and also gives baking a pleasant nutty shade and does not contain gluten. Davlekamova also advised paying attention to ready-made pancake mixes, which will include protein.
