Who can't eat pancakes

The conditional "pancake index" reflects the picture of consumption in modern Russian society, said Ekaterina Kosareva, Managing partner of the VMT Consult agency. In particular, consumer preferences are shifting.

Fewer and fewer people want to "bother" with cooking from scratch and prefer options that will save time: dry mixes in the style of "just add water," she said. — Or they buy frozen semi-finished products that need to be fried or simply reheated, as well as ready-made pancakes from a cafe or restaurant.

One of the reasons, according to the expert, is the lack of free time, and ready-made solutions save time on preparation and mixing.

— In addition, when using semi—finished products, pancakes will turn out even for inexperienced cooks, - she said. — This is accessibility: mixtures, frozen pancakes, and ready-made, already toasted ones are available in any supermarket. And the prices are affordable and quite comparable to the cost of manual cooking. The food culture has also changed in favor of fast and affordable food.

However, those who like the ritual itself and appreciate the taste of homemade pancakes will not give up on self-cooking, despite any trends, she noted.

Doctors advise adults without problems with the digestive system to limit themselves to 100 g of pancakes per day, for children this norm is about half of the adult portion, said Irina Golotina, internist at Invitro.

"When determining the acceptable number of pancakes, consider the daily calorie content of the diet and remember that a medium—sized pancake contains from 190 to 230 calories," she said. — It is optimal to include pancakes in the menu once a day as a full meal, and preferably in the morning, since pancakes are quite difficult to digest food with a high content of fast carbohydrates.

Excessive craving for pancakes can lead to disruptions in the functioning of the digestive system, as well as negatively affect the figure, she said. To reduce the risks, it is recommended to drink a glass of warmed water before a festive feast, preferably with a slice of lemon. You can also use a significant amount of lemon zest to reduce appetite.

Pancakes should be completely excluded from the diet for people with overweight and elevated cholesterol levels, with diagnosed diabetes mellitus and pathologies of the digestive tract, especially in the acute phase, — the doctor reminded. — Be careful when eating pancakes if you have a history of pancreatitis, cholecystitis or cirrhosis of the liver.

To reduce the calorie content of pancakes, they can be cooked without using oil in a specialized non-stick frying pan. In addition, you can reduce the amount of sugar in the dough, replace wheat flour with a more useful alternative — buckwheat or rice. It is also allowed to use milk or kefir with a reduced percentage of fat content or completely skimmed dairy products.
