Every autumn, one of the most anticipated seasonal fruits, persimmon, appears on the shelves of Russian stores. Traditionally, its sales peak in October. Izvestia figured out how to choose a ripe fruit that does not bind in the mouth.
When does the persimmon season start in 2025
The period of persimmon harvesting and sales traditionally falls at the end of summer and autumn. In Russia, fresh fruits begin to appear in stores around September and remain until the end of November or December, depending on the region and import volumes.
In 2025, early varieties and supplies from warm countries appeared already in the first days of September. Closer to December, the amount of fresh persimmons is gradually decreasing.
The timing is influenced by the climatic features of the regions, varieties and logistics of supplies. Imported persimmons from Turkey, Azerbaijan and the Mediterranean often appear earlier than domestic ones, but Russian producers also actively enter the market in mid-autumn. Weather fluctuations can shift the start of the season and the time of harvest.
How to choose a persimmon that does not knit
When choosing a persimmon, it is important to consider the variety, appearance and degree of maturity. All varieties are divided into two main groups: astringent and non-astringent. The former, such as "Khachiya", contain a large amount of tannins, which leaves an unpleasant feeling of viscosity in the mouth with insufficient ripeness. The taste of such fruits is fully revealed only after ripening, when the flesh becomes almost jelly-like. Non-astringent varieties, such as Fuyu and Sharon, can be eaten solid, even dense fruits retain their sweetness and pleasant texture.
Ripe persimmons should be evenly colored in a rich orange or orange-red color. The skin is smooth, without spots, cracks and traces of rot. The tail is dry and tightly fitting to the peduncle — this is one of the signs of good quality. The density also suggests the degree of maturity.: in the Fuyu variety, it is elastic, but not hard, in the Hachiya variety, it is soft. You can check the persimmon with a light tap: if you feel softness under your fingers, but the fruit retains its shape, it means it is ripe. Ripe persimmons emit a light sweet aroma, while unripe ones almost do not smell.
If the persimmon turns out to be hard, then it can ripen at home. To do this, it is enough to leave the fruits at room temperature or put them in a paper bag with apples or bananas — they release ethylene, which accelerates ripening. After 2-3 days, the flesh will become soft and the tartness will disappear. It is not recommended to store unripe persimmons in the refrigerator — low temperatures slow down the ripening and make the pulp watery.
When buying persimmons on the market, it is worth carefully examining several fruits and not focusing only on the color. Fruits with streaks, cracks, and traces of fermentation should be avoided. Experts also advise paying attention to the origin: imported persimmons from Turkey and Azerbaijan usually arrive on the shelves earlier and are of stable quality, while domestic fruits that appear closer to October are valued for their freshness and aroma.
What is useful for persimmons?
Persimmon is traditionally considered one of the healthiest autumn fruits — it is a real concentrate of vitamins, fiber and antioxidants. Fruits contain significant amounts of provitamin A (carotenoids), B vitamins and vitamin C, as well as potassium, manganese and dietary fiber.
Flavonoids and phenolic compounds have also been identified in persimmon, which have a pronounced antioxidant effect: they help the body fight inflammatory processes, strengthen vascular walls and support immunity during the cold season.
The fiber present in persimmon pulp helps to normalize digestion and creates a feeling of fullness, which is especially important in the autumn period, when physical activity often decreases. Nutritionists note that regular but moderate consumption of fruits can have a positive effect on the functioning of the heart and blood vessels due to the combination of potassium and antioxidants.
At the same time, experts remind you that persimmons are high in calories and contain a lot of natural sugars, so people with diabetes or a tendency to gain weight should consider portions and, if necessary, consult a doctor.
Studies confirm that persimmons bring the greatest benefits as part of a balanced diet, where fruits and vegetables complement each other. At the same time, the fruit does not lose its value even after processing: frozen, dried or mashed persimmons retain a significant proportion of nutrients and can be used to make healthy desserts, smoothies and pastries in the cold season.
