"In the heat, perishable products such as meat, fish, milk, and ready-made cooking should be kept in refrigerated display cases at a temperature of no more than plus six degrees. If the product is on the counter in the open sun, even if there is ice, it is better to refuse the purchase," the specialist warned in a conversation with Lenta.Ru .
The expert also advised that when choosing meat and poultry, pay attention to the color and smell. She noted that the surface should not be sticky or unnaturally shiny, and the presence of dark spots, an extraneous sour or ammonia odor is a direct sign of incipient spoilage.
"It is recommended to buy fish in the heat entirely or in large pieces on an ice pad. The gills of fresh fish are bright red or pink, and the eyes are transparent and bulging. Cloudy eyes, sunken sides and gray gills indicate that the product has spent several hours without cold," Specsenko warned.
She added that dairy products are a high—risk area in the heat. Soft cheeses, sour cream and cottage cheese should be sold only from the refrigerator, in a clean container and without liquid stratification, and any swelling of the package indicates the proliferation of gas-forming microorganisms.
In addition, berries, fruits and greens require special attention. They can often contain helminth eggs on the market, especially if they are sold from the ground.
"Before use, such products should be thoroughly washed with running water, and the greens should be additionally soaked for 10-15 minutes in salted water. Tasting unwashed berries right at the counter is unsafe: not only bacteria can remain on the peel, but also traces of fertilizers," she warned.
