Reducing the calorie content of mayonnaise marked "light" does not guarantee its health benefits. Manufacturers often compensate for the lack of fats with sugar, starch, and flavoring additives, which is why labeling light becomes just an advertising ploy. This was announced on June 14 by Anastasia Lebedeva, Associate Professor of the Department of Dietetics at ROSBIOTECH University, in an interview with Gazeta.Ru».

"From the point of view of technology, mayonnaise is an emulsion of oil, egg component and acid. The classic product is quite high in calories precisely because of the high content of vegetable oil. When a manufacturer releases a "light" version, the amount of fat actually decreases, sometimes by almost half. Accordingly, the calorie content decreases. Formally, there is no deception here: such a product is really less caloric," the expert noted.

However, buyers often overlook an important detail. The fat base of the sauce forms not only its energy value, but also its consistency, taste, and feeling of fullness.

A sharp decrease in the fat content makes the texture of the sauce runny and unstable. To recreate the usual density, modified starch, stabilizers, thickeners and flavors are added to the composition. Thus, by reducing the amount of fat, the consumer gets a deeply processed product, the nutritionist warned.

The psychological factor also plays a role. Customers tend to consider products of the light category as dietary, which is why they consume them in excessive quantities. As a result, daily calorie intake does not decrease, and sometimes even increases, because the label "light" weakens control over portion size.
