During Peter's Fast, you can cook three simple but delicious dishes: baked fish with potatoes and herbs, buckwheat with mushrooms and onions, and vegetable stew with beans and tomatoes. The recipes were shared with Izvestia by the chef, the brand chef of the Röndell company, the brand chef of the Cevicheria Restaurant, a member of the Chefs Team Russia community, Evgeny Banny.
"Baked fish with potatoes and herbs is a simple homemade dish that turns out to be flavorful and satisfying without unnecessary ingredients. The dish fully complies with the conditions of fasting, while remaining nutritious thanks to fish and potatoes," he said.
For cooking, you will need fish fillets, potatoes, vegetable oil, garlic, herbs and lemon juice.
"Cut the potatoes into slices, mix with vegetable oil, garlic and herbs. Place on a baking sheet. Top with fillets of fish (cod, walleye, hake or trout). Add salt, lemon juice and bake for 25-30 minutes at 190 degrees," Banny said.
The expert called buckwheat with mushrooms and onions another simple but delicious dish that everyone can cook.
"Buckwheat with mushrooms and onions is a classic lean combination that almost everyone loves. This is a very budget—friendly, quick and satisfying dish with a rich taste without animal products," Banny shared.
Buckwheat, onions, mushrooms, garlic, soy sauce and herbs are needed for cooking.
"The first thing you need to do is boil the buckwheat. Fry the onion and mushrooms in a frying pan until golden brown, add garlic and a little soy sauce. Mix them with buckwheat and sprinkle with herbs," explained the chef.
Vegetable stew with beans and tomatoes is perfect not only for St. Peter's Fast, but also for hot summer.
"Vegetable stew with beans and tomatoes is a bright vegetable dish that can be served as a main dish or as a side dish to fish. The beans make the dish satisfying, and the vegetables give a fresh taste and lightness," said the brand chef.
The dish will require onions, carrots, bell peppers, zucchini, tomatoes, beans, paprika, garlic and herbs.
"First, fry the onion, carrot and bell pepper. Add zucchini, tomatoes and beans to them. Then simmer for 20 minutes with paprika, garlic and herbs," Banny shared.
Earlier, the priest, the head of the Youth Department of the Stavropol Diocese, Alvian Tkhelidze, told Izvestia whether it was possible to seek support from deceased relatives.
