According to the expert, the issue of safe storage of meat becomes especially relevant when the air temperature at a picnic exceeds +25 degrees. The main problem is the transportation and storage of the product before and after cooking.
"When transporting meat to a picnic area, the time spent outside the refrigerator should not exceed two hours. At temperatures above +25, this interval is reduced to one hour. It is advisable to cook fresh chilled meat within 10-12 hours after purchase, ideally in the first four hours, but with the condition of storage in the refrigerator before cooking," she stressed in an interview with Lenta.Ru .
Specenko added that after cooking, the barbecue also requires a temperature regime — at room temperature, the finished meat can be left for no more than two hours, and in hot weather this period is reduced to an hour.
The expert said that before sending meat to the refrigerator, it should be cooled at room temperature to avoid the development of microorganisms, RT reports.
If a change in the color of meat, the appearance of mucus on the surface, or an unpleasant odor is detected, the product should never be eaten, Specsenko warned. Heat treatment in this case will not help save the product, she concluded.
