Pastry chef gave tips on cooking simple lean desserts
Lean desserts can easily be made from fruits, cereals and nuts, because in fact they should be simple, Victoria Polovnaya, pastry chef at the Apples Bake restaurant in Krasnaya Polyana, told Izvestia.
The most common baked apple can be played with new textures and interesting flavor combinations, said the pastry chef.
"For example, mashed baked apples make wonderful cupcakes and carrot biscuits, and lightly baked apples with cinnamon, honey and nuts can be wrapped in a lean strudel using filo dough with an airy and crispy crust," explains the expert.
Another widely available lean dessert is fried banana, which can be prepared at home. The peeled fruit should be cut in half, sprinkle with cane sugar and set on fire with a gas burner until a caramel crust forms. When serving, add lean yogurt (or coconut sour cream) and granola to the banana. You can also cook it yourself. To do this, mix your favorite nuts with large oat flakes of long-term cooking and honey, spread everything on a baking sheet and bake at a low temperature until ready.
"Ready—made granola can be poured into a jar and supplemented with breakfast," explained the pastry chef.
