Endocrinologist and nutritionist Anton Polyakov spoke about the healthiest potato dishes.

In conversation with aif.ru On Friday, February 13, a specialist noted that potatoes can benefit the human body if they are cooked properly. Polyakov explained that the benefits of new potatoes are practically the same as those that have been in the cellar for the winter. However, there is a difference: the younger one is less high in calories.

According to the expert, potatoes cooked al dente are considered the most useful when they retain their elasticity and do not turn into mashed potatoes. This degree of readiness ensures a lower glycemic index. He added that slightly undercooked or baked potatoes are a good option, but fried potatoes are only occasionally acceptable, as this is a less useful cooking method.

The nutritionist also noted that fish would be an ideal addition to potatoes. In addition, it goes well with meat and non—starchy vegetables such as tomatoes, cucumbers and cabbage. At the same time, the daily portion, according to him, should not exceed 200-300 g.

On February 7, Polyakov said that potatoes are contraindicated for people with nightshade intolerance, as well as for allergies or intolerance to the product itself.
