In Russia, the average cost of a set of ingredients for olivier salad increased to 1,059 rubles, which is 32 rubles (+3.1%) more than a year earlier, Kontur analysts calculated exclusively for Izvestia.Yandex. Market.
According to the study, a significant increase in the price of chicken by 70 rubles (+17%) and mayonnaise by 20 rubles (+29%) was partially offset by lower prices for cucumbers (-64 rubles, -27%), as well as cheaper potatoes (-4 rubles, -7%) and eggs (-3 rubles, -10%). The price of canned peas has not changed over the year. As a result, the total cost of the salad increased by 32 rubles, or 3.1%, despite a double-digit increase in individual items. As a result, the growth in olivier's value at the federal level turned out to be restrained, which cannot be said about other regions.
So, in Moscow and the Moscow region, the average cost of a set of ingredients for olivier salad increased to 1,227 rubles, which is 142 rubles (+13.1%) more than a year earlier. The increase in the cost of lettuce in the metropolitan region was caused by several ingredients at the same time. Chicken rose in price by 83 rubles (+18%), canned peas — by 27 rubles (+25%), mayonnaise — by 18 rubles (+25%), sour cream — by 19 rubles (+15%). Against this background, cucumbers remained virtually unchanged in price (+1 ruble), and potatoes fell in price (-7 rubles, -10%), but this was not enough to compensate for the overall increase.
But, for example, in the Sverdlovsk region, the average cost of a set of ingredients for olivier salad increased to 1,060 rubles, which is 114 rubles (+12.1%) more than a year earlier. The main contribution was made by chicken (+83 rubles, +20%), potatoes (+11 rubles, +16%) and eggs (+8 rubles, +31%). Prices for canned peas also increased (+14 rubles, +14%) and sour cream (+13 rubles, +14%). At the same time, cucumbers fell in price (-11 rubles, -7%), and mayonnaise decreased in price (-4 rubles, -6%), which partially smoothed the final dynamics. As a result, the total cost of the salad increased by 114 rubles, or 12.1%.
Evgenia Melnikova, a gastroenterologist at SM Clinic, said on December 18 that it was traditional to set a large table in the New Year. However, some items from the classic menu can have a negative effect on well-being if consumed excessively. According to her, the most popular salads are at risk — herring under a fur coat and olivier.
