Traditionally, after a lavish festive feast, there are many dishes left in the refrigerator, which are usually finished in the following days. However, as Oksana Mikhaleva, an endocrinologist and nutritionist at SM Clinic, PhD, emphasized in an interview with Izvestia on January 1, it is important to take into account the permissible shelf life, which for some products is only up to 12 hours.

"Food poisoning develops when toxins produced by bacteria accumulate in foods. Such dishes become actually poisonous. If food is stored for too long and microorganisms actively multiply in it, this already increases the risk of acute intestinal infection: once in the digestive tract, bacteria cause inflammation and characteristic symptoms of the disease," she warned.

In such cases, the consequences can be serious, so at the first sign of malaise it is necessary to seek medical help.

The main method of prevention in such cases is to control the shelf life. They are different for each type of product: fried and stewed meat can stay in the refrigerator for up to 36 hours, while boiled meat can stay in the refrigerator for no more than a day. Poultry dishes (baked, boiled or stewed) remain safe for approximately 48 hours.

Salads require even more attention. If they are not seasoned with sauce, they remain suitable for up to 18 hours. After refueling, regardless of whether mayonnaise or other sauce is used, the time is reduced to 12 hours. Side dishes are also stored for a short time — from 12 to 18 hours, after which it is better not to consume them.

The specialist advises cooking New Year's dishes in small portions so that they do not stay in the refrigerator longer than allowed and do not pose a threat to health. It is also important to observe the storage conditions — put food in the refrigerator immediately after the feast, store it in closed containers and do not mix freshly prepared dishes with the leftovers of the previous day.
