The catering market in Russia may exceed 1 trillion rubles by the end of 2025. This was reported on December 23 by Izvestia, after reviewing a study by Rosselkhoznadzor analysts who studied the direction of banquet and field services for Russians with ready—made food.

"The turnover of catering services may exceed 1 trillion rubles by the end of 2025, adding about 10-12% compared to 2024. The share of catering in the structure of public catering turnover can reach a quarter of the entire sector, and the total catering market can exceed 4 trillion rubles," the analysts conclude in their research.

They attribute such a dynamic rise to the steady growth in the delivery of ready meals — today both directions are considered the fastest growing segments in the field of catering.

The study also notes that the demand for such event services is particularly increasing with the approach of the New Year period. Catering and catering services for banquets, celebrations and mass events, as well as field projects for the entertainment industry and cultural events, are becoming the most popular.

At the same time, a significant part of orders from corporate clients during the year occur in the second half of autumn — the end of October and November, when companies plan the final events of the year and create New Year's programs for employees.

The peak of catering orders from individuals falls in the middle of December. During the New Year's Eve season, there is also a noticeable increase in interest in the cook—at-home format: dishes and culinary products are prepared directly on site - in the apartment or on the territory of the customer.

According to RSHB estimates, the total revenue from catering during the holidays and vacations alone may amount to about 250 billion rubles.

According to Natalia Khudyakova, head of the Rosselkhoznadzor's Center for Sustainable Development, catering today is no longer solely a catering service and is becoming part of integrated solutions for business, tourism and the impressions industry. According to her, the market demonstrates sustainable development, adapts quickly to customer needs, offering flexible formats and personalization.

Earlier, on December 4, Maxim Liksutov, Deputy Mayor of the capital for Transport and Industry, said that the first resident of the Moscow Ryabinovaya 44 technopark, built in the Ochakovo-Matveevskoye area under the incentive program for job creation, had launched production. The technopark specializes in the needs of the catering industry, including kitchen factories, catering facilities and restaurants.
