Microorganisms develop rapidly in olivier salad when it is in a temperature zone above +5 degrees, which leads to spoilage and the risk of poisoning. Ksenia Kuznetsova, senior lecturer at the Department of Food Safety at Rosbiotech University, told about this on Thursday, December 18.

The expert warned that there is no safe shelf life for lettuce without a refrigerator — after a couple of hours at room temperature, the active reproduction of microflora begins, including potentially pathogenic ones. She added that the fat emulsion in the salad is stratified, which worsens the consistency and can contribute to the development of microorganisms.

At the same time, vegetables quickly lose their freshness and begin to sour, creating a favorable environment for bacteria.

"When storage in the refrigerator is impossible, the period of stay in the heat should be minimal — no more than two hours. If the room is very hot, the shelf life is reduced, and it is better to cover the salad with cling film or a lid. Signs of spoilage: sour smell, liquid on the bottom, discoloration of ingredients. When they appear, the product must be disposed of," Kuznetsova said in a conversation with Lenta.Ru .

The specialist recommended storing the salad only in the refrigerator at a temperature of no more than + 4 degrees, taking it out immediately before serving.

Earlier that day, Evgenia Melnikova, a gastroenterologist at SM Clinic, told Izvestia that some items from the classic New Year's menu, if consumed excessively, can negatively affect well-being. According to her, the most popular salads are at risk — herring under a fur coat and olivier, reports 360.ru .

The doctor reminded that mayonnaise, which is traditionally used in both salads, cannot be called a healthy product. The main danger is associated with the presence of trans fats, modified vegetable oils that the body is unable to fully process. Such compounds accumulate in the liver and pancreas, provoking inflammatory reactions.

She also stressed that pork dishes are high in animal fat and are harmful to health, RT reports.

The press service of the Ministry of Agriculture and Food of the Moscow Region reported on December 9 that cooking one serving of herring salad under a fur coat in the Moscow region costs almost 110 rubles in December 2025, the Moscow City News agency reports.
