In order for tangerines to really enjoy their taste, it is important to be able to distinguish ripe and juicy fruits from those that have lost their quality during storage and transportation. On December 7, Elena Specenko, head of the Roskachestvo Food Safety Competence Center, told Izvestia which signs should be guided in the store.
According to her, when choosing, fruits with damaged skins, dark spots, brown mesh and soft areas should be avoided — they indicate deterioration in quality and violation of storage conditions. If mold is found inside the package, the purchase of the entire box should be abandoned, since fungal spores quickly infect neighboring fruits.
In addition, special attention should be paid to the structure of the peel: wateriness and loss of taste are often associated with hypothermia during transportation. Green spots or an immature "tail" signal immaturity, and a hard and wrinkled peel indicates overripe and decreased juiciness.
"Ripe tangerine has a bright, stable aroma, uniform coloring and a noticeable heaviness in the hand, which indicates a high juice content. Greenish spots or a green "tail" indicate immaturity. Overripe fruits, on the contrary, lose weight, their skins harden and shrivel. A good sign is the peel, which easily separates from the pulp," Specsenko said.
The expert noted that a green leaf on the stalk is not a sign of freshness. It can retain color regardless of the quality of the tangerine and is often used only to give the product a more attractive appearance.

According to her, the main mistake that leads to excessive spending and food waste is cooking too many different dishes on a large scale. It is better to limit yourself to 3-4 main courses, 1-2 appetizers and one dessert. The average amount of ready-made food per person for a festive dinner is 300-350 g.
