On December 1, Moscow hosted the VII culinary festival "Herring under a Fur Coat", organized by the International Alliance of Professional Chefs (IAPK) and the Moscow Culinary Association (AKM). The jury, which included chef Mikhail Perchenko, evaluated the participants' ability to surprise and present a classic dish in a new way.
"It's a very simple dish. But it is most difficult to surprise him and evaluate him further. Therefore, the task is actually very difficult," said Perchenko.
He added that he expects the participants to use modern techniques, such as the use of micro-greenery, sublimation and other technologies that have already become a trend in the capital, but remain a novelty for the regions.
