In St. Petersburg, the number of bakeries in the budget segment decreased by 6%
The number of bakeries in St. Petersburg is decreasing, especially in the most affordable residential segment. In two months, the number of such establishments decreased by 6%, from 2,390 to 2,247. This was announced on November 13 by the Delovoy Peterburg portal with reference to AVG Real Estate.
Anna Guseva, the owner of AVG Real Estate, explained that the situation is aggravated by the policy of landlords: when choosing between network operators and small entrepreneurs, preference is more often given to large players. According to her, the bakery market in the city has already formed, and the need for fresh inexpensive pastries is partially intercepted by retail chains that open mini-bakeries in convenience stores. At the same time, establishments with a higher average receipt and original products are actively developing.
There is no closing trend in the central trading corridors yet. Yulia Kuznetsova, Director of the Nikoliers Retail Real Estate department, noted that about 20 bakeries operate in the center, and four new outlets have opened here in 2024-2025. The NF GROUP confirms that the reduction applies more to residential areas and individual franchise projects.
"This segment remains in high demand: bakeries and bakeries still occupy the best corner spaces and locations with high pedestrian traffic, especially on key shopping and pedestrian corridors," said Anna Lapchenko, Director of the Retail Real Estate Department at NF GROUP in St. Petersburg.
At the same time, Danil Gerasimidi, the founder of Gastro Norma, noted that the market is experiencing a moderate decline due to the glut of the low-cost segment. According to him, retail pressure is increasing on such bakeries, which leads to rebranding or closures.
Yuri Izosimov, director of the Floors company in St. Petersburg, added that new projects continue to appear, but the era of "good but ordinary" bakeries is gone. Only concepts with a bright idea and an audience-oriented presentation become successful. The number of hybrid formats is growing — bakeries and coffee shops, gastropubs with original dishes, craft and farming projects using traditional technologies. This approach allows you to form a stable community around the brand.
On October 28, Delovoy Peterburg reported that the turnover of the Russian catering market reached 4.4 trillion rubles in nine months. According to the portal, the main driver of the market was the fast food segment, where the number of transactions increased by 7%. At the same time, prices in St. Petersburg are rising in the fast food and mid-range segments, where the average check is up to 2.5 thousand rubles per guest.
