A biotechnologist has refuted the myth of the dangers of yeast bread
For a long time, there was a myth on the Internet about the dangers of yeast-free bread for human health. In an interview with the Newspaper.Ru" On October 17, Candidate of Pharmaceutical Sciences, Senior lecturer at the Department of Biotechnology and Industrial Pharmacy of RTU MIREA Maria Zolotareva dispelled this myth.
According to the biotechnologist, yeast cannot affect the intestinal microflora in any way.
"Yeast is a single—celled fungus that, among other things, consists of proteins, <...> [which are destroyed] already at temperatures from +50 to +60 degrees, which leads to cell death. In this regard, when entering an oven heated to a temperature of + 200 degrees, all the yeast in the dough dies," Zolotareva explained.
In addition, the pharmacist noted that such myths are often necessary to promote another product. She recommended paying attention to reputable studies in the field of food safety and dietetics for an adequate perception of certain facts or fictions.
Earlier, on October 4, nutritionist Veronika Gusakova spoke about the presence of hidden sugar in popular "healthy" foods. So, the expert, among other harmful "benefits", identified supposedly sugar-free bars, grain bread, sauces, fruit smoothies and drinks based on vegetable milk, where few people think about the sugar content.
