Irina Lyalina, Acting Dean of the Faculty of Natural Sciences at the State University of Education, listed the unhealthy properties of borscht.

In conversation with Lenta.Ru On Wednesday, October 15, the specialist noted that despite its rich composition with vitamins, minerals and fiber, borscht can be harmful under certain conditions.

The expert explained that rich borscht is contraindicated for people with gastrointestinal diseases, gout, overweight and cardiovascular problems. Broths on bones that have been cooked for a long time are especially harmful for patients with gastritis, ulcers and pancreatitis, as purines accumulate in them, which turn into uric acid.

She added that heavy metals and toxins can be released from meat during prolonged cooking, and fatty broths are dangerous for people with vascular diseases, writes RT. Frying with a lot of oil can cause heartburn, and vegetables release nitrates during rapid cooking, which are harmful for cardiovascular disorders and high blood pressure.

In addition, nitrates can contribute to the formation of methemoglobin, which impairs the supply of oxygen to tissues, which is especially dangerous in diseases of the hematopoietic system. The biologist also recalled that borscht with sorrel is contraindicated in gout, and salty additives increase acidity, which is harmful to the heart.

Earlier that day, restaurateur Stanislav Lisichenko suggested including borscht, pancakes and cabbage soup in the standard of Russian cuisine. According to him, the creation of such a standard is an important step for the promotion and popularization of Russian dishes, notes 360.ru .

At the end of September, the autumn vegetable season for classic borscht started at fairs in Moscow. Crispy cabbage, beets, freshly dug potatoes, herbs, garlic, onions and other products are now on the shelves, ideal for a hearty and vitamin—rich soup, the Moscow City News agency notes.
