- Chefs talked about the author's handwriting in the recipes for the menu at Baltika Fest
The first Baltika Fest food festival will be held on September 13 at Igora Drive. On September 12, the chefs who prepared the event menu told about the author's handwriting in the traditional recipes that will be presented at the festival.
"We took local ingredients and traditional recipes as a basis, but in the author's interpretation. After all, these are some kind of cultural codes of the regions, which, I am sure, the guests will love," said Egor Nikonov, brand head of the restaurants of the resort "Igora" and "Favorita", as well as the restaurants "Gustav Winter" and "Dot on the Map".
It is noted that the kitchen has already received over 1.5 tons of products from local farmers and suppliers. The purchases include almost 5,000 crayfish from Karelian lakes, 170 kg of White Sea mussels, 200 kg of ribs and knuckle, and 140 kg of brisket.
Sergey Karpov, the chef of the Favorite restaurant on Igora Drive, added that the festival is always a bit of an adventure, but it is important to preserve the character of the dish, despite working with huge volumes.
"We decided to show Russia through food: the Caucasus is meat and spices, the Volga region is pilaf, the North is seafood. Everything is different, but in the end it adds up to a single picture," he explained.
Nikita Tsatsyn, regional head of the Igora Resort and Gustav Winter Restaurant, emphasized that the very idea of the festival is based on movement and diversity.
"It's a whole route where food becomes part of the guest's experience. You taste the dishes of the regions one by one, and each has its own voice. It's not just about the taste, but also about the atmosphere," he said.
In addition to the gastronomic stations, food trucks, workshops and concerts are waiting for guests. Chaif, Avariya Disco and Marie Crymbreri will perform on the stage. And the Favorite restaurant will be open all day right in the heart of the festival.
On September 11, Russian-Serbian married couple Ekaterina and Srechko Milosavljevic shared with Izvestia their expectations from the Baltika Fest gastronomic festival. According to the woman, she had already been to drift competitions at the Igora Drive circuit (the festival site) more than once, and she really liked the organization. Now Ekaterina hopes to see motorcycle racing too.
On September 13, the Baltika Fest gastrofestival will be held at the Igora Drive autodrome. The event will be headlined by Russian rock legend Chaif, the cult band of the 1990s and 2000s Avaria Disco and singer Marie Crymbreri. Guests can enjoy master classes and gastro shows, food and drinks, as well as live performances and interactive entertainment.
Irina Fedorova, Director of Corporate Relations and Government Relations at the Baltika Brewing Company, told Izvestia on September 7 that people will be able to enjoy a variety of flavors at the Baltika Fest food festival. So, the menu will feature almost 20 culinary masterpieces, including shrimp with garlic and chili, stewed beef brisket, roast beef and grilled sausages with stewed cabbage.
All important news is on the Izvestia channel in the MAX messenger.
