Egor Nikonov, the brand chef of the Igora resort, the Dot on the Map and Winter's Cottage hotel chains, will present a unique gastronomic concept at the Baltika Fest, based on the regional culinary traditions of Russia. The native of Karelia emphasized that the idea was born from his childhood memories of the nature of his native land, local products, fish, berries and game.

"I was born and raised in Karelia, so the regional cuisine has been with me, roughly speaking, since birth. Because all that surrounded me was nature, local products, fish, berries, and game. And it's all in my blood since childhood. And here, at the Baltika Fest food festival, we decided to focus on regional cuisine, accentuate all tastes, match them correctly with selected beers and make gastronomic pairings so that our guests would be delicious and interesting," he shared.

The Baltika Fest gastrofestival will feature specialized corners, each reflecting the culinary characteristics of different regions of the country. Volzhsky corner introduces guests to traditional pilaf, Caucasian — with rich meat dishes, and northern — with a variety of seafood.

Special mention was given to the author's corner "Baltic Railway Station", created as a culinary joke. Fried pies and sandwiches will be offered here, which are ideally combined with a glass of light unfiltered beer ("0.0%", "non—alcoholic", - Ed.). According to the organizers, the chef explained, this corner should evoke warm memories of the Russian North for those who were born there or have been there.
