In preparation for the Baltika Fest food festival, which will take place on September 13 in the Leningrad region at the Igora Drive autodrome, special attention is paid not only to the quality of the products, but also to the emotional perception of the guests. Sergey Karpov, the chef of the Favorit restaurant, told Izvestia about this.
According to the expert, the chefs at the Baltika Fest food festival decided to abandon the usual snacks such as chips and dried fish, which can be found everywhere. Instead, they strive to offer visitors something special. Their task is to create an unforgettable experience that will awaken the memories of meetings with friends among the guests of the festival and convey this atmosphere through carefully selected dishes.
The chef noted that in Karelia they have already started collecting orders from fishermen for the supply of live crayfish, as the volumes are very large. Karpov added that all live crayfish will arrive at the site on the 13th.
"We will start steaming the sauce, in which we will stew the ribs and knuckle. To do this, we will take 100 liters of dark beer (0.0%, non—alcoholic, - Ed.). We will boil it 10 times, we will get 10 liters from this. The tartness will go away, the taste will concentrate," explained the chef.
On the basis of this sauce, it is planned to languish the knuckle and ribs. Karpov noted that this will create a special aroma and taste that will emphasize the quality of the meat. This approach helps to make the dish unique. A large smoker will also be installed at the resort, in which 200 kg of meat will languish on alder chips during the day.
Karpov added that there are many tasks related to logistics and product quality in the process of preparing for the Baltika Fest.
According to the chef, comprehensive preparation and attention to detail will create a festive atmosphere filled with flavors, aromas and a pleasant atmosphere that will remain in the memory of the participants for a long time.
On September 13, the Baltika Fest gastro festival will be held at the Igora Drive autodrome in St. Petersburg. The event will be headlined by Russian rock legend Chaif, the cult band of the 1990s and 2000s Avaria Disco and singer Marie Crymbreri.
