Gastronomic diversity is one of the many riches of Russia. Guests of the large-scale Baltika Fest festival, which will be held at the Igora Drive circuit in the Leningrad Region on September 13, will be able to fully enjoy it. The organizers promise a large gastromarket, where cuisines from different parts of Russia will be presented. On the eve of this event, Izvestia figured out what dishes the regions of our country are famous for.

In good company

This year, for the first time in Russia, the Baltika Fest gastrofestival will be held, organized by the Baltika brewing Company in honor of its 35th anniversary. On September 13, guests of the event will gather at the Igora Drive racetrack in the Leningrad Region to watch famous artists perform, take part in master classes, and taste dishes from different parts of the country: from Kaliningrad in the west to Kamchatka in the east.

The latter can be done in a special space where the corners of the festival are gathered. The concept of the event is based on two principles: regionality and compatibility with foam drinks. That is, the dishes presented have already managed to gain a foothold in the minds of Russians as something suitable for relaxation and fun company, Sergey Karpov, chef of the Favorite restaurant at the Igora Drive autodrome, shares with Izvestia.

— These are the dishes, positions, food that we somehow associate with a feast in which beer is chosen as a drink, but at the same time with reference to the region, — explains the interlocutor of the publication.

For professionals, this holiday is a chance to experiment, reinterpreting traditional recipes with innovative trends, and for visitors it is an opportunity to immerse themselves in the history and culture of each region through the prism of gastronomy.

A total of six corners await the guests of Baltika Fest.

The Russian North

The North-western region of Russia is one of the most popular destinations of Russian gastronomy today. It is generous with dishes of fish, game, berries and mushrooms, due to the harsh climate and rich forest resources.

People come here to taste authentic creamy fish soup, fish pies, pastries made with rye flour, desserts with cloudberries and lingonberries. Stroganina, venison, forest and marsh birds, and wild hare are valued here. The region is actively developing thanks to festivals featuring local delicacies and authentic cuisine.

Chefs from the Baltika Fest gastrofestival team focused on dishes from the Leningrad, Arkhangelsk, and Murmansk regions. They decided to use crayfish as a starting point, because it is this snack that is most often associated with an intoxicating drink.

— We made a corner, called it "Russian North". In it we have Karelian crayfish, northern shrimps, White Sea mussels. The result is the north-western region," says Sergey Karpov.

Caucasus

When it comes to Caucasian cuisine, fried meat, spicy herbs, a variety of flatbreads and fresh vegetables immediately come to mind. Khinkali, shashlik, kutabs, kharcho and adjika are recognized national hits of the region.

Tourists travel to the Caucasus as part of wine tours, barbecue festivals and tastings of traditional cheeses and drinks: sweet sherbet, wine, ayran, suusaba, chacha and others.

— The cuisine of this corner is represented by tortillas with stewed beef, roast beef with adjika and stewed beef brisket with coleslaw. That is, fresh, clear, flavorful meat," says the chef.

Central Russia

Central Russia is famous for simple and hearty dishes such as cabbage soup, pancakes, pickles and porridges. The traditional use of meat, mushrooms and cereals reflects the rural culture of the region. The gastrotourism here is primarily aimed at getting to know modern Russian cuisine, crafts and festive festivities with tasting of cheeses, honey and artisan bread.

In this corner, the culinary team will present dishes such as pork ribs, pork knuckle, beef and chicken sausages, and turkey.

The Baltic Coast

The Baltic regions of Russia are famous for their fish. Unique appetizer recipes from herring, sprat, walleye, and cod provide a special gastronomic charm. Gourmets are attracted by authentic seafood dishes, wild animal meat, local vegetables and berries.

This fishing-based corner is complemented by the idea of travel and "fast food." There's mackerel, sprats, and fried fish—simple, familiar, and understandable. The chefs gave the whole thing the name "Baltiyskiy Vokzal" and designated it a kind of station specializing in sandwiches, pancakes and even fried pies — in general, everything that Russians are used to eating on the way.

— Everyone associates these snacks with the road, with some kind of journey: fried pies with potatoes, with cabbage, — Sergey Karpov notes.

Volga cuisine

Tatar cuisine is famous for the symbols of hospitality: shurpa, kozylyk, kystyby, elesh, echpochmak, chak-chak. Lots of bread, dairy products and meat.

Now it is one of the most popular places for tourists who want to immerse themselves in authentic recipes and culture. That is why it was decided to focus on the gastronomic traditions of Tatarstan, and especially pilaf, in the corner of the Volga region. This dish is prepared in many parts of Russia, but each one has its own way.

— Pilaf fits perfectly into the idea of cooking something outside on an open fire. Both shish kebab and pilaf: cauldron, fire, delivery," adds the chef of the Favorite restaurant.

Black Sea Region

The basis of the cuisine of the Black Sea region is fresh seafood — mussels, rapan, hamsa, as well as fruits, vegetables and herbs. The main dishes are prepared mainly from fish, for example, hamsu on coals, dumplings and pies with fish fillings. It also serves meat dishes cooked over an open fire, corn (corn bread, cheese sauce with corn flour), as well as cheeses, cabbage rolls made from grape leaves (sarma) and pastries.

— If we go by product, it is linked to agriculture and cattle breeding: cheeses, potatoes, chicken. And the other link is local, with some kind of Black Sea flair - it's fried food. That is, it is a station built for deep-frying snacks. Here we have cheese balls, potato slices, breaded chicken strips," concludes the chef.

The Baltika Fest gastro-festival starts on September 13 at 14:00 and will last until late in the evening. Tickets for the event can be purchased at the online ticket offices and on the website of the Igora Drive complex. The cost is 3 thousand rubles.
