A biotechnologist talked about the dangers of cheap margarine over natural butter

Often in a store, people are faced with a choice: to buy butter or margarine, not knowing that the cheapness of margarine is due to its not very useful composition. About this on August 10, "Gazeta.Ru" was told by Ekaterina Volnova, Acting Head of the Department of Biotechnology and Bioorganic Synthesis, Candidate of Technical Sciences.

As the expert explained, butter is a dairy product that is made from milk fat obtained by separating or churning cream. Margarine is an emulsified fat product, the main raw material for which are vegetable oils that undergo the process of hydrogenation or literally solidification. In this regard, there is a mass that, according to the legislation of the Russian Federation, does not have the right to be produced in the food industry, so they began to carry out similar procedures, after which margarine was obtained. However, the quality of the product has not improved.

Vegetable fat, unlike animal fat, has many disadvantages. So, according to Volnova, due to excessive consumption of margarine, there is a risk of cardiovascular diseases and an increase in cholesterol.

"Margarine is cheaper due to its low cost and oil processing, but its consumption should be minimized. Read the ingredients carefully: if there are "hydrogenated/partially hydrogenated oils" in the ingredient list, it is better to stop using such products. High–quality spreads with a high content of unsaturated fats (omega–3, omega—6) can be a healthy alternative," the biotechnologist noted.
