Dmitry Kulikov, Director of the Institute of Applied Biotechnology and Food Engineering named after Academician I.A. Rogov of the Russian Academy of Sciences, spoke about its main ingredients and cooking methods on July 20.

According to her, this product consists of a protein base, which is most often used soy, peas, wheat gluten (seitan), mushrooms or legumes. Fats are also added to it. It can be coconut, sunflower or rapeseed oil, which are used to simulate marbling and juiciness. Beetroot juice, yeast extracts, and various spices are used as flavors and colorants. Extrusion, fermentation or 3D printing can achieve a structure resembling meat.

"The main advantages include the fact that such meat contains less saturated fat and cholesterol compared to animal meat. It also reduces the carbon footprint and environmental impact and is suitable for allergy sufferers (if there is no reaction to soy or gluten). The disadvantages include a high degree of processing — some products contain a lot of salt, preservatives and additives. The composition is not always balanced — protein may be less digestible than animal protein," he said in an interview with Gazeta.Ru».

Kulikov noted that vegan meat can be consumed regularly, but it is better to alternate it with other protein sources, such as tofu, lentils, beans, and nuts. You should also choose products with minimal processing.
