The number of food poisoning cases increases with the beginning of the summer veranda season. Elena Specenko, head of the Roskachestvo Center for Food Safety Competencies, told about this on Wednesday, July 16.

According to the expert, the main problem of summer cafes is the violation of the temperature regime of food storage.

"In the heat, meat and fish dishes, dairy products and salads with mayonnaise dressing become an ideal breeding ground for pathogenic microorganisms. The safe shelf life of such products outdoors is significantly reduced," Specsenko explained in a conversation with Lenta.Ru .

She added that another problem of such establishments is the quality of the ice used in drinks. Most often, food companies forget about the need for production control regarding ice for making drinks, as well as high-quality washing and disinfection of ice machines, the expert pointed out. It can also lead to poisoning, Specsenko noted.

"An additional risk factor is street dirt that settles on food and dishes. On outdoor verandas located along busy streets, exhaust fumes, road dust and other pollutants enter the food. It is dangerous when food remains uncovered even for a few minutes," the specialist warned.

In turn, Ekaterina Pankova, lecturer at the Znanie Society, nutritionist and nutritionist, noted that in the heat it is better to give up fatty meat and fast food, since their digestion requires a lot of energy, which can lead to internal overheating.

Earlier that day, Associate Professor of the Department of Food Safety Natalia Fomenko said in an interview with the website kp.ru that it is better to eat ready meals from the delivery in the first two or three days, and salads on the first day.

The expert also recalled that homemade food, such as meat dishes, can be stored for no more than three days, and salads and side dishes for up to 12 hours at a temperature of no more than +4 degrees, RT reports.

In April, the Moscow City News agency reported that the top metropolitan areas in terms of the number of cafes and restaurants with a summer veranda include Tverskaya, Presnensky and Basmanny districts.

Almost every street in the city has establishments with Russian, Italian, Chinese and Indian cuisine, and summer porches are especially popular during the warmer months.
