"Modern gastronomy offers consumers a wide variety of concepts — on average, the project includes 24 locations with different cuisines and service formats. It is noteworthy that the market maintains a balance between network operators implementing several projects (43%) and individual players with a single project in their portfolio (57%). At the same time, a fairly high share of network players may indicate the success of the format and the potential for its scaling," the head of the CORE market research department explained to Izvestia.XP Vasily Grigoriev.
Moscow Mayor Sergei Sobyanin, congratulating restaurateurs and catering workers on their professional holiday, said on June 7 that the capital was among the gastronomic capitals of the world for the second year in a row. At the same time, he stressed, "Muscovites cannot imagine their lives without food prepared by professionals, whether it's a cup of coffee at home before work or a hearty dinner in a restaurant."
