Chefs talked about the menu for SPIEF 2025

At the St. Petersburg International Economic Forum (SPIEF) this year, a set of snacks, soup, hot, dessert and a drink will be presented for one person at a fixed price of 6.5 thousand rubles. Anton Gribanov, the chef of the Forum restaurant, told reporters on June 15.

"Our current focus is that we maximize the use of local products made in our country. And the price in this restaurant this year will be 6.5 thousand per person for the set menu," Gribanov said.

This year, the restaurant's guests will enjoy various meat, fish and vegetarian dishes, including roast beef salad, mushroom pickle, lentil soup with squid, trout with fried celery cream, lingonberry pie and other dishes.

In the Varevo restaurant, where visitors will be able to taste "Old Russian traditions in a modern version," the average check per person will be 5,000 rubles, "if he eats little," said chef Alexey Belikov.

"In fact, we have a dish of ancient Russian cuisine, but in a modern style, in a modern presentation, so that a person can plunge into ancient Russian culture, try a combination of the past with the modern," he shared.

At the moment, active preparations for the event are underway at the forum site. This year, representatives from over 92 countries will come to St. Petersburg for the SPIEF.

Earlier, on June 9, Russian President Vladimir Putin sent greetings to the participants of SPIEF 2025. In his address, he emphasized the role of the festival as an authoritative international platform that helps bring together politicians, representatives of business, scientific and expert circles from many countries.
