Before the May holidays, Izvestia conducted a control purchase of meat products for making shashlik in the most popular hypermarkets. The main task was to find out whether the quality of shashlik meat sold is safe to eat.

The purchased samples were given to the testing reference laboratory of the National Center for Fish and Agricultural Products Safety for examination.

For the examination "Izvestia" purchased products produced by LLC "Fillier Proper", LLC "Miratorg-Kursk", LLC "Miratorg-Bryansk", hypermarket chains "O'KEY", "IndiLight" and retail chains "Magnolia" and "Verny". At the time of publication of the material the results of examination of the goods of the last three companies were not available.

E. coli was found in two samples. Both are produced by the company "Miratorg".

E. coli can be inside the meat, as it lives in the body of animals. Or it can be introduced into the product by a person at the stage of slicing, if the production does not comply with sanitary standards, said gastroenterologist Andrei Yakushev. Also, according to him, the bacterium can get into the products during transportation with non-compliance with sealing and temperature conditions.

At the same time, the expert reminded that E. coli can be non-pathogenic, that is, not provoking diseases and pathogenic - pathogenic.

"The second variant of E. coli causes diarrhea, nausea, vomiting and dehydration. In children and people with weakened immunity can on the background of infection can occur kidney damage or pathologies of the urinary tract", - he added.

In four samples, according to the results, there were microorganisms that got there at the production site. We are talking about the CMAFANM indicator (the number of mesophilic, aerobic and facultative-anaerobic microorganisms). It allows to determine the state of the product: characterizes its quality, freshness and safety, and also allows to assess the level of sanitary and hygienic regimes in production, storage and transportation conditions.
