The doctor named the most harmful marinades for shish kebab


To prevent shish kebab from being harmful to health, you need to marinate it properly. Marinades are divided into definitely harmful and harmful if used improperly. On Thursday, May 1, internist Andrey Zaikov told about this in an interview with Gazeta.Ru».
The doctor noted that it is necessary to take into account individual health characteristics, since marinade, safe for one person, may be contraindicated for another.
So, according to the expert, people with stomach diseases are not recommended to use marinades based on vinegar, citric acid or malic acid. If you have problems with the gallbladder or pancreas, you should avoid spicy marinades with an abundance of spices, as well as too fatty meat.
In addition, Zaikov warned about the risks of buying ready-made kebabs in stores where meat is sold in a marinade under a film. In such cases, it is impossible to check the composition of the marinade, the presence of harmful additives, or compliance with cooking standards. Such meat may be infected with bacteria or parasites, the therapist warned.
As for marinades based on fermented dairy products (kefir, tan), they require special care, Zaikov said. If you keep a shish kebab in such a marinade warm for too long, pathogenic bacteria can develop in it. Marinating at room temperature should not exceed five hours, and it is easy to break this period on the road to nature. In this regard, the doctor warned that sour-milk marinades should be prepared immediately before frying.
Zaikov also noted that aluminum cookware is not suitable for pickling: upon contact with acids, aluminum oxide is formed, which gets into food and can harm the body.
"And don't forget that any marinade can ruin your holiday with either intestinal infection (pathogenic bacteria) or toxicoinfection. Therefore, the choice of meat and marinating shish kebab should be approached very responsibly," the source concluded.
The day before, Vladimir Neronov, an infectious disease specialist at JSC "Medicine" (Academician Roitberg Clinic), MD, told Izvestia about the dangers of ready-made marinated kebabs from stores. So, manufacturers often add stabilizers, thickeners and acidity regulators to the product, although only meat, onions, salt and spices are indicated on the label. During laboratory tests, salmonella and E. coli were found in some shipments, which indicates violations during storage and transportation.
