The best restaurants of the country in 2025 are named


The WhereToEat Russia award ceremony took place in Kazan on Tuesday, April 22. Awards from the national restaurant award were awarded to the best restaurants in the country. In addition, the winners in a series of special nominations were announced.
The results of the award are traditionally based on the assessments of several hundred of the country's leading experts from among restaurateurs, hoteliers, chefs, sommeliers, and gastronomic journalists. The nominees are determined by secret ballot.
Bourgeois Bohemians (Saint Petersburg) became the best restaurant in the country. The second place went to the Olluco restaurant (Moscow). AVA (Moscow) is in third place. The top ten projects in the country also included Savva (Moscow), Frantsuza Bistro (St. Petersburg), Sage (Moscow), Maya (Moscow), Tunguska (Krasnoyarsk), Big Wine Freaks (Moscow) and Padron (Moscow).
The winners in special nominations were also awarded. Dmitry Blinov (Duo Band, St. Petersburg) was recognized as the restaurateur of the year, and Nikanor Veira (Olluco, Moscow) was awarded the prestigious title of chef of the Year.
Stas Paul (Duo Band, St. Petersburg) became the pastry chef of the year, Maria Syukrina (Oltremare, Moscow) was recognized as the best sommelier, and Alexandra Alekseeva (Terra et Silva, Kazan) was recognized as the waiter of the year. The Kazan More project was awarded the title of bar of the year.
In addition, Alexey Gorensky (Bellini Group, Krasnoyarsk) was awarded a special award for his contribution to the development of the country's restaurant industry.
WhereToEat is a national restaurant award established in 2013. Then, on the initiative of a group of gastronomic journalists, a rating of the best restaurants in St. Petersburg was compiled. Currently, in addition to St. Petersburg, restaurants in Moscow, southern Russia, the Central Region, Tatarstan, the Ural Federal District, Perm Krai, Siberia and the Far East are competing for the title of the best.
On April 22, Khatuna Kolbaya, a restaurateur and co-owner of Saperavi Cafe and Wai Me!, told Izvestia about the prospects for introducing new technologies. For example, automated burger cooking lines, pizza robots, drones, and "smart woks" are becoming more common in restaurants, and such robotics can speed up processes and reduce costs, the expert noted. At the same time, artificial intelligence (AI) is able to offer new culinary combinations and predict trends, she added.
