Easter cakes should not be bought at spontaneous markets without documents, in stores where there are no storage conditions, or from private sellers without information about the composition and date of manufacture. In addition, you should avoid festive treats that contain margarine. On April 5, Irina Lyalina, Acting Dean of the Faculty of Natural Sciences at the State University of Education, told Izvestia how to choose Easter cakes and not harm your health.
According to her, smudges are unacceptable on the glaze. It should also not stick and crumble. The crumb of the cake is fresh, if moderately porous, not too dry or excessively moist, and has no unnecessary odors. In addition, the cake must be wrapped in foil or a box and marked.
The classic composition of the cake is flour, eggs, milk, butter, sugar, yeast, raisins, nuts, candied fruits, vanilla, cinnamon. The glaze contains egg white, powdered sugar and lemon juice.
"Avoid cakes with margarine instead of butter — it reduces the quality, with preservatives E200-E299 — especially with a long shelf life, with synthetic flavors and dyes, for example, E102, E110, E129," Lyalina warned.
She explained that additives E102 (tartrazine), E110, and E129 can cause allergies. E220-E228 (sulfites) — reactions in people with asthma. E200-E299 (preservatives), E321 (butylhydroxytoluene) indicate an unnaturally long shelf life.
At the same time, the specialist clarified: the shelf life of the cake is 5-10 days with a natural composition, with an industrial composition — up to 30 days. Cottage cheese Easter is stored for up to 3-5 days, if without preservatives. If the shelf life on the label exceeds 30 days, it is likely that preservatives will be added.
Lyalina does not recommend buying Easter treats at markets that operate without documents, in stores where there are no storage facilities, for example, a warm showcase. In addition, you should not buy cakes from private sellers who do not provide information about the composition and date of manufacture.
"The cake is stored at room temperature, in a paper or cloth bag, away from moisture. Cottage cheese Easter — only in the refrigerator (up to + 4 degrees) in an airtight package. If you doubt the freshness, it is better to refuse the purchase," concluded the specialist.
Earlier, on March 29, Irina Lyalina told Izvestia why it is harmful to eat sweets at night. According to her, the body processes sugar more slowly at night, which increases the load on the pancreas. Excess sugar turns into fat, which increases the risk of obesity. In addition, sugar disrupts nighttime metabolism, which can worsen sleep.
