According to the study, "the price of desserts increased by an average of 13%, while the total sales volume remained virtually unchanged. The price of Pavlova cakes increased the most — 23%, Tiramisu - 21% and eclairs - 34%. The price of "Napoleon" decreased slightly — only 2%. Sales of desserts "Ant Hill", "Napoleon" and "Pavlova" increased by 10%, 20% and 43%, respectively. For the remaining positions, the number of sales fell, and only the demand for Medovik remained unchanged.
"According to our data, Pavlova and Napoleon cakes were in the highest demand among consumers in February of this year. Most likely, the effect of taste preferences is working — after all, these are desserts familiar from childhood. Clear taste and nostalgia have replaced the experiments that were popular quite recently. Eclairs and panna cotta aroused the least consumer interest. It should be noted that at the same time, the price of eclairs increased by 34% compared to last year, which is due to the replacement of the standard eclair recipe with author's solutions, individual recipes and, as a result, higher cost," explained analyst Ksenia Korzan.
Oleg Kobyakov, head of the Russian branch of the Food and Agriculture Organization of the United Nations (FAO), commented on world food prices on February 6. The average global food price index for 2024 was 2.5% lower than the index for 2023.
