The least caloric among traditional New Year salads is "Mimosa". This was reported to the Agency of city news "Moscow" on Sunday, December 29, by Antonina Starodubova, chief freelance specialist nutritionist of the Department of Health of the capital.

"The caloric value of "Mimosa" and herring under a fur coat is about 140 kcal per 100 g of the dish. Olivier and crab salad have a slightly higher calorie content - 150-155 kcal per 100 g of dish <...> From the point of view of a nutritionist, of all the New Year's four salad "Mimosa" has still some relative advantage over the others. It is slightly less caloric and, as a rule, with a slightly lower salt content than, say, herring under a fur coat", - explained the expert.

The nutritionist added that the traditional New Year's table olivier has a high content of saturated fat and dietary salt. Meanwhile, herring, which also has a high salt content, is an excellent source of protein, omega-3 fatty acids and vitamin D, Starodubova noted.

The expert also told how to reduce the calorie content of popular salads. So, in Olivier instead of sausage you can put boiled white meat of chicken or turkey, add greens, fresh vegetables and make a dressing of low-fat sour cream. As for herring under a fur coat, she recommended choosing low-salted varieties of herring, reduce the amount of mayonnaise in the dish, diluting it with vegetable oil and lemon juice, additionally do not salt the vegetables.

"For a salad with crab sticks, you can choose other, unrefined varieties instead of white rice - this will enrich the dish with vitamins and fiber, and replace mayonnaise with sour cream. Change the dressing recipe for "Mimosa", and canned fish can be replaced with boiled fish," - advised the nutritionist.

Starodubtseva recommended limiting the total portion of holiday snacks to 150-200 g.

A day earlier, nutritionist Natalia Pavlyuk said that mayonnaise in herring under a fur coat should be no more than 30 g, otherwise the holiday may end up with GI diseases. According to the nutritionist, there can be no more than 35 g of fat in the salad per 100 g.
