The expert told about ways to make New Year's dishes healthier


Traditional New Year's dishes are high-calorie and heavy for the stomach, but they can be made healthier by changing the recipe. This was told to Izvestia on December 25 by Konstantin Usov, associate professor of the Department of Therapeutics of the Medical Faculty of the State University of Education, pharmacologist.
"Traditional dishes that we cook from year to year are not very healthy. Olivier salads and herring under a fur coat are tasty, but heavy for the stomach and high-calorie dishes with a lot of fat. And the industrial mayonnaises we use to dress them with contain preservatives and other harmful additives," he explained.
In order to make these same dishes healthier, the pharmacologist advised to use homemade mayonnaise instead of store-bought mayonnaise. It can also be mixed in half with sour cream. In addition, Usov said that unsweetened Greek yogurt combined with pesto sauce is a great alternative to the classic dressing.
The expert urged not to be afraid to experiment and introduce new, more dietary dishes to the holiday menu.
"Herring under a fur coat can be replaced by a salad "Norwegian caprice". Instead of carrots, it contains an apple and pickled cucumbers, and the dressing is made on the basis of vegetable oil with lemon. Soy mayonnaise, smoked or salad tofu, avocado should be used to create a vegetarian version of Olivier," Usov said.
The holiday menu can also include homemade low-fat cholodets, serve red caviar and fish, oven-baked meat dishes or shashlik from salmon fillet, sprats can be replaced by boiled eggs with tuna filling, the expert recommended. As a side dish, he suggested baked vegetables instead of high-calorie mashed potatoes.
Desserts pharmacologist advised to prepare on the basis of mousses, souffles, jelly or homemade ice cream.
Earlier, on December 21, the head of the laboratory for the study and correction of eating behavior NMIC therapy and preventive medicine of the Ministry of Health of Russia Sofia Eliashevich told "Izvestia" about the five most harmful New Year's products. In the first place of her anti-rating was alcohol. The expert also singled out confectionery with added sugars, products containing excessive amounts of salt and mayonnaise sauces.
