They can be not only tasty but also useful, but much depends on the method of preparation, type of meat and portion, Irina Lyalina, acting dean of the Faculty of Natural Sciences at the State University of Education, biologist, told Izvestia.
"If we talk about the general advantages of baking, the benefit is definitely in the preservation of vitamins and trace elements. Baking requires less oil or no oil at all, it reduces the content of harmful fats. Baked dishes turn out to be less caloric. But there is a downside to the baking process - overheating (over 200 °C) can produce carcinogenic compounds, so it is important to monitor the temperature," - said the expert.
According to her, when frying in a frying pan, it is important to use only frying oils and also watch the temperature and color of the oil. You can not use oil more than once, it should be changed if you have to fry a lot.
"Chicken (fillets, hams) is a lean meat rich in protein, especially fillets. The satiety is average. Easy to digest, especially without skin. It is better to bake it with a minimum of spices. Fry only on a minimum amount of oil, preferably on the grill," Lyalina specified.
At the same time, boujenina (pork) is rich in iron and B vitamins, but its high fat content makes it caloric. It is heavy for digestion, especially if eaten at night. The expert advised baking it with herbs and garlic. At the same time, frying is not recommended because of the high fat content.
"Beef (steak, roast beef) is an excellent source of iron, zinc and protein. High satiety. Lighter than pork, especially lean cuts. Lean cuts, such as tenderloin, are considered dietary. Better baked, leaving a slightly pink center - medium. Grilling is possible, but it is important to avoid abundant use of oil," Lyalina said.
At the same time, mutton is rich in healthy fats and amino acids, especially young meat. According to the biologist, such a dish is heavy for an evening meal. However, it contains less cholesterol than pork. She recommended baking meat in a sleeve or foil. At the same time, it is possible to fry, but the pieces should be lean.
"Duck, goose are rich in vitamins (A, B, E), amino acids. Very hearty. Hard to digest because of the fat. But duck is less fatty than goose. It is better to bake with fruits, such as apples, oranges. Frying is not recommended because of the high fat content", - said the expert.
At the same time, turkey is a dietary meat with low fat content. It contains selenium, useful for the immune system. Such meat has medium satiety and is easily digested. Lyalina advised to bake it whole or in portions. Frying is possible, but grilling is preferable.
At the same time, fish is rich in omega-3 fatty acids. Low-fat varieties - cod, pollock - are suitable for the dietary table.
"General recommendations for the New Year's table: it is healthier to bake turkey, chicken, fish, beef. You can fry pieces of beef or chicken, but better on the grill. Fish is better to fry without breading. Heartier, of course, boujenina, lamb, goose, but easier for the body turkey, fish, chicken without skin. You can cook in small quantities to diversify the menu. Baking in foil or sleeve will allow you to preserve the flavor, juices and useful substances without excess fat", - concluded Lyalina.
