Kholodets is a famous dish in various parts of the world. In Russia, it is made of meat, cartilage and bones, simmering for a long time on low heat. In Austria and Germany, pork kholodets are preferred, in France chicken meat is most often used, while in Asian countries pigs' ears, skin and giblets are used to create "glass meat". Ekaterina Kashukh, a gastroenterologist and an expert at Gemotest Laboratory, told Izvestia on December 21 about the benefits and harms of kolodets.
"Kholodets is rich in protein - the main building material for cells. It also contains zinc and iron, necessary for proper hematopoiesis and immunity support, B vitamins, lysine - an amino acid that helps calcium to be properly digested in the body. And this, in turn, has a positive effect on bone health," notes Kashukh.
According to her, despite all the beneficial properties, excessive consumption of cold cream can have a negative impact on health. This dish is high in fat and can increase blood cholesterol levels. Those who suffer from chronic diseases of the gastrointestinal tract, urolithiasis or gout, should carefully add it to their diet. In addition, a lot of salt is used in the process of cooking coldcake, which can lead to edema and increased blood pressure.
"Coldcake should be stored for no more than three days in the refrigerator, and it can be combined with bread, croutons or hot dishes such as boiled or baked potatoes," summarized Kashukh.
Earlier, on November 24, Natalia Kharchenko, candidate of medical sciences, gastroenterologist at the European Medical Center (EMC), told Izvestia about the most harmful New Year's dishes. According to her, carbonated sweet drinks due to sugar can sharply increase blood glucose levels, and orthophosphoric acid damages tooth enamel.
