Evgeny Shuvalov, the founder of the Caviar store chain Evgeny Shuvalov, told Izvestia on November 26.

"We should not expect additional growth in caviar prices in December, bona fide sellers have already formed New Year stocks of products in warehouses, sales volumes are clear, I do not see any factors that can seriously affect prices on store shelves," he said.

The expert specified that earlier prices increased due to weak catches of salmon in the Far East during the salmon season of 2024, as well as due to rising costs of fishermen and producers. According to him, currently red caviar in retail stores costs from Br10 thousand to Br15 thousand per 1 kg, depending on the quality, type and volume of packaging or brand. But there are no prerequisites for a significant additional price increase.

Earlier, November 20, the head of the Public Council at Rospotrebnadzor Oleg Pavlov told "Izvestia" how not to make a mistake in choosing caviar, not to stumble upon a fake, as well as what to pay attention to, except for digital labeling. He specified that the word "caviar" and the type of fish from which it is obtained, for example, "salmon" or "sturgeon", as well as the date of production, shelf life, storage conditions must be indicated on the consumer package or hard-to-remove label.

In addition, jars with salmon grain in three rows must be labeled with the following symbols: date of manufacture (date, month, year); the word "caviar"; plant number, shift number, fish industry index (letter "P"). On cans with sturgeon caviar - in two rows: date of manufacture (decade, month, year); master number.
